Roasted Curry Squash and Carrot Soup

This is a heavy, warming soup that's perfect for appetizer or main course.  It takes a bit to make but the ingredients are not hard to find.  You can adjust the curry to taste and I would say you should use a mild one to start.

  • 2 Medium Acorn Squash
  • 6 Medium Carrots More or less depending on size
  • 4 Tbsp Butter
  • 1 cup Heavy Cream
  • 32 oz Chicken Stock can substitute water or veg stock
  • 1/2 cup sugar
  • 2 tbsp Curry Powder Max. Use your favorite


  1. Preheat oven to 350.  Use convection roast if you have it.  Stephen Yasko says get the oven hot before you start!

  2. Cut in half and clean squash and carrots.  Put in roasting dish with squash skin on.  Butter in cavities of squash and on carrots.  Roast till soft and fully cooked through.  Baste the butter a few times.  Remove when done and let cool.

  3. put the stock or water In a big stock pot.  Clean the squash and put the flesh in the pot.  Same with the carrots--cut them up into small pieces as you do.  Dump the remaining butter and and small caramelized bits. 

    You can do one of two things to blend the soup.  Either put in a traditional blender in batches till smooth or use an immersion blender.  The immersion blender will not get the soup as smooth unless you stand there for a much longer period of time than the traditional blender.  Use the traditional blender on your try. 

  4. Once Smooth, add the cream and bring to a low and slow simmer.  You want the soup to heat, not boil.  Once hot, add the sugar and curry slowly, tasting as you go along to balance the sweetness and curry.  

    Heat slowly again and serve.  Can be topped with sour cream or creme fraiche.  Garnish with your favorite decoration like chives, cracked pepper or even a little paprika.
